            Greetings, eaters of food. How ya doin'
this month? First of all, I'd like to thank you
all for your wonderful letters. I'm glad you
enjoy my recipes and I love you all. But
seriously, have you really been paying at-
tention to your diet? Some of you 'Bad
M.F.'s' out there are probably eating your-
self into the grave.
O.K., you come home after a long day at
the ramp and mom's already got dinner on
the table waiting for you and dad to sit down
and inhale it. The void in your stomach is
more vacant than the full pipe you've been
dreaming about.
You dash from the bathroom without dry-
ing your hands, rushing up to the awaiting
meal scene only to find a gnarly slab of
dripping red cow, bleeding all over the
potatoes.
"Where's the beef?" you say. Hell, it's on
my plate. "Hey mom, how about a salad?"
you ask.
"There's some left over jello in the
fridge." What kind of meal is this anyway?
Meat, potatoes and leftover jello. Oh, and
don't forget the glass of whole milk to
swash it down with.
You probably don't realize it, but when
you're raging on your skate, you tend to
burn buckets-full of energy. If you keep
yourself to a limited diet of hashed-out gar-
bage food, you're gonna suffer some long-
term ailments in the long run, and before
you realize it, you're gonna be in your mid-
twenties and all bloated out. Believe me, it'll
happen if you're not careful. You'll get that
spare tire hanging around your waist, your
Levi's will get tighter and the top button will
become useless. Eventually, all of these
things will impair your riding, unless you're
just one of the lucky S.O.B.s who can eat
virtually anything without any physical ef-
fects.
HOW TO MODIFY THIS PROBLEM
Try to eat at least one good salad every-
day. Now don't get all defensive. You're
thinking "Rabbit food," right? True, rabbits
do eat salad-type material, but don't lower
yourself to comparing people with rodents.
One of the most important benefits about
salads, is that they're cheaper than hell.
Your average sized, all-around good salad,
including a good home made dressing,
costs around a buck or less.
Salads contain practically no fat. With all
the accidental fats gathered from Big Macs,
Burly Burritos, Mega beers and soft drinks,
you can afford to "skarf" down something
that acutally has a lot of nutritional value.
One such value is the richness of car-
bohydrates contained in each serving of
salad. Carbohydrates are highly potent
with "Energy." You think you've got some
energy now, wait till you've got a steady
constant supply of this stuff. Salads contain
a good balance of available vitamins and in
this form, is a lot easier to digest. Your body
consumes the available nutrition and it's a
lot easier to convert all of this into energy.
Regardless of the sterotyped back-
ground, a lot of 'Real Men' do eat salads.
They aren't just a "hippie-meal" or a "nutri-
tion freak" item. You won't start 'tie-dying
all your T-shirts after your hundredth salad
either.

SOME ALTERNATIVES TO THE NORM
Liver, fish, and chicken are excellent al-
ternatives to the "BIG-BURLY-MANLY-
STEAKS." Take "LIVER" for instance. You
remember liver, the shapeless bloody stuff
in those plastic containers with clear lids in
the meat section right next to the chicken
necks, cow tongues and tripe. Liver is really
cheap: Two bucks worth of liver is enough
to feed four people. It's easy to prepare: A
little flour, a frying pan with lid, some cook-
ing oil, chopped onions and a little garlic is
all you need. Put a little flour on a plate,
grab a slab of liver, flip-flop it in the flour till
it's a little white, carefully place in some
heated oil in the frying pan, place onions on
top and put lid on. After about a minute or
two, yank off the lid and you'll notice that
the slab is getting a little stiff. Don't panic,
throw it in the trash, fling yourself onto your
bed and start crying into your arm-pit about
how you'll never know how to cook well.
When it gets this stiff, flip it over with a fork
(or something like a fork), sprinkle on some
garlic and cook it a little while longer. Check
it by cutting it a little bit with a knife. If it's still
bloody, cook a little while longer, until it
stops being bloody. No longer. This way it'll
be real tender. Serve with a salad, some
lightly steamed veggies (broccoli, as-
paragus, carrots, etc.), and maybe an
orange or something for desert. Did you
know that it's best to eat most foods in its
rawest form? No kiding, it retains all its ele-
ments and nutritional properties. So it's
O.K. to eat the veggies raw too!
Back to the liver slab: There's more to Mr.
Liver than you've ever imagined. Mr. Liver
is a gold-mine in some respects. He con-
tains the B-complex vitamins. "What are
the B-complex?" you ask. Well I'm gonna
tell you, so shut up and listen!!
THE B-COMPLEX VITAMINS
The B-complex vitamins are water-solu-
ble. This means that they are not stored in
your body and must be replenished every-
day, unlike vitamins that are fat soluble,"
which are stored in your body fat. So, the
No. 1 important thing about the B-complex,
is that you need them everyday. Now this
next part is real important, so pay more at-
tention. The No. 2 important thing is that
the B-complex vitamins should all be taken
together because they balance each other
out, if not taken together, the B-complex
vitamins are useless on their own. There
are several B-vitamins. Here's a brief run-
down on the Bs:
B-1-Aids digestion, feeds the nervous
system; relieves the nausea of air/sea sick-
ness, constipation, herpes and dental pain.
Other good sources of B1 are: Yeast, whole
grains, milk, soy and veggies.
B-2-Helps sore mouth, eyes, lip, ton-
gue, vision, nail and hair fatigue. Sources:
Milk, leafy green veggies, fish, eggs and
cheese.
B-3-Is Niacin (this one is ultra important),
improves circulation, reduces cholesterol,
helps prevent and ease migraine (if you're
deficient in niacin, you get pellegra, which
causes the three Ds: Disorder, Diarrhea
and Dermitides which leads to the ultimate
D. Death. Some signs of Pellegra: Weak-
ness, poor growth, weight loss, depres-
sion, confusion, schizophrenia,
headaches, sore mouth and tongue, diges-
tion problems, diarrhea). Niacin promotes
healthy skin, tongue and digstive system
(helps diarrhea) can help vertigo and acne.
Sources: Whole wheat, fish, yeast, wheat
germ, peanuts, avocados, dates and eggs.
B-6-Reduces muscle spasms, cramps,
numbness, diuretic. Helps skin and nerv-
ous disorders, loss of hair, diarrhea,
hemorrhoids, anemia, ulcers, tooth decay
and diabetes. Sources: Yeast, bran, wheat
germ, molasses, bananas, cabbage, milk.
B-12-Prevents blood deficiency
(anemia) by regenerating red blood cells,
promotes growth, improves memory, con-
centration and balance. Sources: Milk,
meat, fish, eggs, kelp, or seaweed.
B-15-Stimulates the immune system,
reduces cholesterol, helps neutralize the
craving the alcohol, extends cell-life, helps
relieve angina and asthma, anti-pollutant.
Sources: Yeast, brown rice, whole grains,
pumpkin seeds and sesame seeds.
B-17-This is a controversial cancer
preventing/controlling vitamin. Its sources
are: Apricot kernels, cherries, apples, nec-1
tarines, peaches and plums.
So that's pretty much it in a nutshell. I my-
self just recently learned of all this vitamin
stuff, because in school when it was taught,
I really didn't take it too seriously. In one
ear...When I'd sit and wonder why I felt so
shitty all the time and had no motivation,
someone said that it might be the vitamin
thing. Heck I don't know, take it for what you
want, just remember, when you're riding
your skate to its full extent, it's almost on
the same level as beating the crap out of
yourself. So you need your body to be
stoked on healing itself efficiently when the
